Toucinho do Céu/ Heaven Lard

Com tantos ovos que me deram andei a pensar no que iria fazer e lembrei-me que a minha mãe costuma fazer...Toucinho do Céu!
O toucinho do céu é um doce tradicional português, de origem conventual. Íntegra o riquíssimo legado gastronómico deixado pelas freiras beneditinas, que estiveram instaladas num mosteiro, em Murça, até finais do século XIX. Acredita-se mesmo que elas terão sido as criadoras da receita original deste doce, que mais tarde se popularizou por todo o país. Dentre as inúmeras receitas de toucinho do céu, a de Murça é uma das mais tradicionais e apreciadas.

Ingredientes
125 g de amêndoas
125 g de doce de chila
2 colheres (sopa) de farinha
20 gemas
500 g de açúcar
açúcar em pó p/ polvilhar
Confecção
Rale as amêndoas.
Leve o açúcar ao lume com um copo de água e deixe ferver até obter ponto de fio (a calda correr em fios, sem grande resistência ).Junte o doce de chila e deixe ferver mais 2 a 3 minutos.Adicione as amêndoas raladas, que devem estar bem enxutas, sempre mexendo até fazer um ponto de estrada muito fraco (o fundo do tacho deve ver-se muito rapidamente).Retire o doce do lume e, depois de arrefecer um pouco, junte as gemas, que vão a engrossar um pouco ao lume, sem que no entanto o doce ferva. Deixe arrefecer ligeiramente.Unte e polvilhe um forma. Espalhe uma colher de farinha sobre o fundo e deite nela o doce.Polvilhe a superfície com a outra colher de farinha e leve a cozer em forno pré-aquecido a 180º C.
O toucinho do céu estará cozido quando lhe introduzir uma faca e esta sair quente e limpa. Deixe arrefecer um pouco e desenforme.Polvilhe com açúcar em pó.

p.s-Para a próxima vou forrar a forma com papel vegetal ...aconselho a fazerem isso pois tive dificuldades em desenformar.

With so many eggs that someone gave me I've been thinking about what would do ...and I remembered that my mother used to make...Heaven Lard!
The Heaven Lard is a traditional sweet Portuguese, source convent. Full the rich culinary legacy left by Benedictine nuns, which were installed in a monastery in Murça until the late nineteenth century. It is even believed that they have been the creators of the original recipe of this sweet, which later became popular throughout the country. Among the numerous recipes of Heaven Lard, the Murça is one of the most traditional and appreciated.

Ingredients
125 g almonds
125 g of Chila Jam
2 tbsp (tablespoons) flour
20 gems
500 g sugar
Powdered sugar w / powder
Making
Grate the almonds.
Take the sugar on the stove with a glass of water and boil until the point of wire (wire running into the syrup, without much resistance). Stir in the Chila Jam and simmer 2-3 more minutos. Add the ground almonds, which should be very lean, and  make a very weak point of the road (the bottom of the pan should see very quickly.) Remove the mixture from the heat and, after cooling down a bit, add the egg yolks, ranging to thicken a bit on the stove, without  boil. Allow to cool slightly. Grease and sprinkle a form. Spread a tablespoon of flour on the bottom and pour the mixture into it. Sprinkle the surface with another tablespoon of flour and take to bake in preheaten oven 180 º C.
The Heaven Lard will be cooked when you insert a knife and it comes out hot and clean. Let cool slightly and unmold.Sprinkle with powdered sugar.

p.s-Next time, I'll line the form with parchment paper ... I advise you to do this because I had trouble unmolding.
